Bacon Buffalo Chicken Salad Sandwich

This tangy, spicy, creamy sando is perfect for game day! Turn into sliders if you've got a crowd coming over.

Ingredients

  • Rotisserie Chicken
  • Mayonaise
  • Frank's Red Hot (or your favorite buffalo style sauce)
  • Scallions (greens)
  • Salt & Pepper
  • Garlic Powder
  • Onion Powder
  • Bacon (I used center cut bacon)
  • American Cheese
  • Mozzarella Cheese
  • Hidden Valley Buttermilk Ranch (or your favorite ranch dressing)
  • Blue Cheese Crumbles (optional)
  • Iceberg Lettuce (or your favorite lettuce)
  • Brioche Buns

Instructions

  1. Remove breasts from your rotisserie chicken and shred in a bowl
  2. Slice scallion greens
  3. Add salt, pepper, onion powder, garlic powder, Frank's Red Hot and sliced scallion greens to bowl and mix to coat.
  4. Add Mayonnaise and fold together until well combined
  5. Bake your bacon at 400°F for 18-20 minutes or until your desired doneness
  6. Slice or shred your lettuce
  7. Toast your buns in the oven with cheese to melt
  8. Assemble sandwich - Bottom Bun, Buffalo Chicken Salad, Bacon, Ranch, Optional Blue Cheese Crumbles, Shredded Lettuce, Top Bun
