This fantastically simple dish is perfect for breakfast with rice, served over noodle dishes, as a ramen topping, or even a crazy addition to pizza.

  1. Heat Spicy Chili Crisp in a pan over medium to medium-low heat until sizzling and fragrant
  2. Crack eggs directly on top of Spicy Chili Crisp
  3. Add a pinch of salt to the yolks. You don't need to salt the whites, the Spicy Chili Crisp will provide plenty of flavor
  4. Fry until the whites start to set and get crispy along the outside
  5. Tilt the pan and spoon some of the extra oil over the tops of the whites to help finish cooking (for sunny side eggs. for over easy, flip the eggs to finish cooking the whites)
  6. Top with scallions and serve over toast, rice, noodles, pizza, on a burger, whatever you can think to put eggs on top of
  7. ENJOY!
